Torta di mele, cibo per l’anima
La torta di mele, a mio parere, è un po’ come le polpette, fa subito casa e famiglia.
In inglese c’è un termine che rende l’idea molto bene ‘comfort food’ che tradotto liberamente potrebbe essere
‘cibo rassicurante’ o meglio ancora ‘ cibo per l’anima’.
Confesso che in questo caso specifico ho commesso un errore da vera principiante: le mele che avevo in casa si sono
rivelate farinose e quindi inadatte allo scopo ma io ho fatto la torta lo stesso e non è venuta bene come l’avevo pensata.
Peccato! Comunque l’abbiamo divorata ugualmente con gusto e non ne è avanzata neanche una fetta.
Torta di mele. Ingredienti per una tortiera di 26/28 cm (8 o 10 fette):
8 mele Granny Smit, Fuji o Kanzi, comunque non farinose;
succo di limone;
70 g zucchero integrale di canna;
1 banana matura;
scorza grattugiata di mezzo limone;
vaniglia;
un pizzico di sale;
40 g burro di cocco ammorbidito;
120 g panna vegetale;
10 g lievito senza fosfati;
1 cucchiaino arrow root;
50 g farina riso;
40 g amido di mais;
Fodera con carta da forno una tortiera a bordi staccabili del diametro di 26 o 28 cm.
Accendi il forno statico a 180°.
Sbuccia le mele, tagliale in quarti e affettale finemente con una mandolina.
Se possiedi l’accessorio affettaverdure del tuo robot da cucina è il momento di usarlo.
Le mele affettate tendono ad ossidare velocemente quindi spruzzale con succo di limone e coprile con pellicola.
Setaccia assieme le farine con il lievito e l’arrow root, in una grossa ciotola.
Schiaccia la banana matura assieme a un cucchiaino di succo di limone, lo zucchero, la scorza di limone grattugiata,
la vaniglia e al sale.
Mescola tutto molto bene e otterrai una specie di crema.
Unisci questa crema alle farine.
Sbatti la panna vegetale, tiepida o a temperatura ambiente, con il burro di cocco e versa il liquido così ottenuto
nel composto mescolando con cura finché sarà perfettamente omogeneo e fluido.
Unisci delicatamente al resto le mele ben scolate dal loro liquido di vegetazione.
Versa il tutto nella tortiera preparata, spolvera la superficie con un po’ di zucchero e inforna per 50/60 minuti.
Controlla la cottura pungendo la torta con uno stecchino di legno che deve risultare asciutto e pulito.
Come sempre il tempo di cottura è indicativo poichè i forni casalinghi hanno potenze diverse.
Per una superficie dorata lascia la torta sotto il grill del forno per qualche minuto.
Fai intiepidire nel forno aperto fino al momento di servire.
Servi la torta di mele tiepida, così com’è o accompagnata da questo lemon curd vegan.

Apple cake, food for the soul
The apple cake, in my opinion, is a bit like the meatballs, it immediately reminds home and family.
In English there is a term which gives perfectly this idea, ‘comfort food’ that, freely translated could be
‘reassuring food’ or even better ‘food for the soul’.
I confess that in this specific case I made a mistake as a real beginner: the apples I had at home were
not crispy but mealy therefore unsuitable for the purpose.
I decided to make the cake anyway but the result was not exactly as I thought.
However, my friends and I appreciated the cake a lot and not even a slice of it has been leftover.
Apple cake. Ingredients for a 26/28 cm cake (8 or 10 slices):
8 apples Granny Smit, Fuji or Kanzi, however non-mealy;
lemon juice;
70 g cane sugar;
1 ripe banana;
grated zest of half a lemon;
vanilla;
a pinch of salt;
40 g softened coconut butter;
120 g vegetal cream;
10 g phosphate-free yeast;
1 teaspoon arrow root;
50 g rice flour;
40 g corn starch;
Line with parchment paper a round baking pan of 26 or 28 cm, with detachable edges .
Turn the static oven to 180 °.
Peel the apples, cut into quarters and slice them finely with a vegetable slicer.
If you own the food processor’s accessory to slice vegetables, it’s time to use it.
Sliced apples tend to oxidize quickly then spray them with lemon juice and cover
with film.
Sift the flours together with the yeast and the root arrow in a large bowl.
Mash the ripe banana together with a teaspoon of lemon juice, sugar,
the grated lemon zest, vanilla and salt.
Mix everything very well until you will get a kind of cream.
Add this cream to the flours.
Blend the vegetal cream lukewarm or at room temperature, with the coconut butter and pour the liquid
thus obtained in the compound, stirring carefully until it is perfectly homogeneous and fluid.
Gently merge the drained apples to the rest.
Place the compound into the baking pan, sprinkle the surface with a little sugar
and bake in the oven for about 50/60 minutes.
Check the cooking by pricking the cake with a wooden toothpick, which should result dry and clean.
As always, the cooking time is indicative as the home ovens have different potencies.
For a golden surface leave the cake under the oven grill for a few minutes.
Let cool in the open oven until serving.
Serve the apple cake lukewarm, simply as it is or accompanied by this vegan lemon curd.
