Crocchette di miglio con curry Madras e latte di cocco.
Il miglio è un toccasana soprattutto per unghie e capelli.
E’ anche buonissimo quindi vale la pena dare il via alla creatività e scovare nuovi modi di cucinarlo.
Questa ricetta di crocchette di miglio è un po’ esotica, ha pochissimi grassi ed è senza glutine e senza lattosio, inoltre è semplicissima da preparare.
Assolutamente da provare quindi!!
Crocchette di miglio con curry Madras e latte di cocco. Ingredienti per 4/6 persone:
miglio decorticato 150g.;
1 zucchina;
1 carota;
2 cucchiai di piselli sgranati;
1 patata bollita calda;
1 mela Granny Smit;
vino bianco 200 ml.;
aceto di mele 40 ml.;
curry Madras 4 cucchiai colmi;
1 cipolla bionda;
2 foglie di alloro;
latte di cocco non dolcificato 150 ml.;
uva passa a piacere (facoltativo);
olio extra vergine di oliva;
sale marino.
Per decorare: mezza tazza di nocciole tostate e tritate grossolanamente.
Lava il miglio decorticato. Lavalo bene in acqua corrente con l’aiuto di un colino a rete stropicciandolo tra le mani per alcuni minuti.
Questa operazione serve a ridurre quella specie di gelatina che il miglio produce quando lo si cuoce.
Metti il miglio ben lavato in un pentolino con il doppio del suo volume di acqua, un pizzico di sale i piselli, la carota e la zucchina tagliate a cubetti.
Copri il recipiente e cuoci a fuoco dolce per 10 minuti, quindi spegni il fuoco e lascia riposare il tutto per altri 10 minuti.
Mentre il miglio cuoce prepara la salsa al curry: affetta sottilmente la mela, e mettila a cuocere, su fuoco basso a recipiente coperto, con il vino bianco, l’aceto di mele, un pizzico di sale e 2 cucchiai di curry Madras.
Il curry Madras è abbastanza reperibile, attenzione però: ne esistono diversi tipi, i più popolari sono:
- mild , piccante ma non troppo,
- medium, decisamente piccante,
- hot, piccante da estintore,
quindi non ti distrarre e scegli quello adatto alle tue esigenze, sarebbe un peccato rovinare queste crocchette di miglio per aver scelto il grado di piccante sbagliato!
Affetta sottilmente anche la cipolla bionda e falla appassire in una padella,con l’alloro, due cucchiai di olio e un pizzico di sale.
Trascorso questo tempo il miglio avrà assorbito tutta l’acqua e le verdure saranno cotte.
Versalo in una capace ciotola e sgranalo bene con la forchetta. Lascia intiepidire.
Aggiungi la patata bollita calda, schiacciata e due cucchiai di curry Madras.
Amalgama il tutto, regola di sale e trita nel mixer tre o quattro cucchiaiate di questo composto quindi incorporale al resto. Se ti piace il gusto agrodolce, che qui è davvero perfetto, aggiungi anche una manciata di uva passa ammorbidita in poca acqua tiepida e ben strizzata.
Il composto si presenta consistente.
Con l’aiuto di un cucchiaino inumidito e con le mani unte di olio, forma delle crocchette di miglio rotonde e disponile, in un solo strato, in una teglia antiaderente.
Coprile con la cipolla ormai dorata, scartando l’alloro.
Incorpora il latte di cocco alla salsa al Curry e versa anche questa sulle crocchette di miglio.
Il latte di cocco al naturale, non dolcificato, si trova i tutti i supermercati.
Muovi delicatamente la teglia per far arrivare il condimento dappertutto.
Copri la teglia con un foglio di alluminio e mettila in forno già caldo a 180° per 15 minuti quindi togli l’alluminio e lascia cuocere ancora, scoperto, per altri 10 minuti.
Se vuoi termina la cottura sotto il grill del forno, cinque o dieci minuti, per far prendere più colore alle crocchette di miglio.
Servi le crocchette di miglio calde, cosparse di nocciole tostate e tritate.

Millet balls with Curry Madras and coconut milk
Millet is a blessing especially for nails and hair. It ‘also tasty therefore I like to be creative and find new ways to cook it. This is a recipe a bit ‘exotic’, low fat, gluten-free and lactose-free, it is also very easy to prepare.
Here’s what to do:
Wash 150 grams of decorticated millet. Wash well in running water
with the help of a strainer rubbing the millet between the hands for a few minutes.
This helps to reduce that kind of jelly that millet produces when it is
cooked.
Put the millet it in a saucepan with twice its volume of water,a pinch of salt and diced vegetables. I used a zucchini,and carrots and peas for color.
Cover the pan and cook on low heat for 10 minutes, then turn off the heat and let rest for another 10′.
While the millet is cooking prepare the curry sauce: Thinly slice an apple,a Granny Smit would be perfect, and put it to cook on low heat with 200 ml of white wine, 40 ml of apple cider vinegar a pinch of salt
and two tablespoons of Madras Curry powder.
The Curry Madras is quite available, but be careful: There are different types,the most popular are:
- Mild, spicy but not too much,
- Medium, spicy,
- Hot, spicy from fire extinguisher,
Therefore do not get distracted and choose your favourite. It would be a shame to ruin this dish for choosing the wrong hotness!
Thinly slice also a yellow onion and lightly fry it in a frying pan, with a bay leaf, two tablespoons of extra virgin olive oil and some salt.
After this time the millet has absorbed all the water, the vegetables are cooked and you can pour it into a large bowl and move it with a fork to separate the grains. Let rest to cool.
Add a hot boiled and crushed potato and two tablespoons of Madras curry powder.
Mix well, and chop, in a food processor, three or four tablespoons of this mixture, season with salt, add to the rest and mix well.
If you like sweet and sour taste, which is really perfect for this recipe, also add a handful of raisins soaked in lukewarm water and wrung out.
The mixture is consistent.
With the help of a wet teaspoon and with oiled hands, shape the mixture into balls and arrange them in a greased baking pan.
Cover the balls with the fried onions, discarding the bay leaf.
Add 150ml of coconut milk to the curry sauce and pour the sauce over the millet balls.
Coconut milk is available in every supermarket.
Move the pan gently to let the sauce get everywhere.
Cover the pan with aluminum foil and put it in a preheated oven at 180° for 15 minutes. Eliminate the aluminum foil and leave cook, uncovered, for another 10 minutes.
Finish cooking under the grill of the oven to brown the top for five or ten minutes.
Serve hot, sprinkled with chopped toasted hazelnuts.
